  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 large red onions, halved, thinly sliced
  • 1 tablespoon brown sugar
  • 60g baby spinach leaves, shredded
  • 250g (2 cups) roast turkey, chopped
  • 1/2 cup freshly grated parmesan cheese
  • 6 eggs
  • 1/2 cup milk
  • garden salad, to serve

Method

  • Step 1
    Melt butter in a frying pan over medium heat. Add oil, onions and sugar. Cook, stirring occasionally, for 15 to 20 minutes, or until soft and golden.

    Preheat oven to 180�C. Lightly grease a 12 x 1/3-cup capacity muffin pan.
  • Step 3
    Place half the caramelised onions into a bowl. Add spinach, turkey and parmesan. Mix well. Divide turkey mixture evenly between muffin holes. Combine eggs, milk, and salt and pepper in a jug. Whisk with a fork. Carefully pour egg mixture over turkey mixture, to three-quarters fill muffin holes.
  • Step 4
    Bake for 20 minutes, or until frittatas are puffed and golden. Serve with remaining onions and garden salad.
