  • 1 litre vanilla ice cream, softened slightly
  • 250g rose-flavoured Turkish delight, roughly chopped
  • 125g strawberries, hulled, finely chopped (see Notes)
  • 75g blueberries, chopped (see Notes)
  • 60g raspberries (see Notes)
  • 1/2 cup shelled pistachios, toasted
  • 60g Belgian milk chocolate, finely chopped
  • Berries, extra, to serve
  • Cherries, to serve


  • Step 1
    Line base and sides of an 8 x 25cm bar pan with plastic wrap.
  • Step 2
    In a large bowl, combine vanilla ice cream, turkish delight, berries, pistachios and chocolate. Spoon into prepared pan, smoothing top. Cover with foil and freeze overnight until firm.
  • Step 3
    Remove log from pan and remove plastic wrap. (See Notes) Serve sliced, with extra berries or cherries.
