  • 1 cup (250g) caster sugar
  • 1/3 cup (80ml) water
  • 825g can whole plums
  • 4 eggs
  • 2/3 cup (80g) icing sugar
  • 2 teaspoons vanilla essence
  • 1 orange, rind grated
  • 200g butter, melted
  • 2 cups (300g) self-raising flour
  • Cream, to serve


  • Step 1
    Preheat oven to 180�C. Line a 23cm round cake pan with non-stick baking paper. Stir 1 cup (250g) caster sugar and 1/3 cup (80ml) water in a saucepan over a medium high heat until dissolved. Simmer for 7-10 minutes until golden.

    Pour mixture into the pan. Drain 825g can whole plums and reserve syrup. Halve the plums and remove stones. Beat 4 eggs, 2/3 cup (80g) icing sugar, 2 teaspoons vanilla essence and 1 orange, rind grated until pale and thick.
  • Step 3
    Fold in 200g butter, melted, and 2 cups (300g) self-raising flour. Spoon the mixture over the plums. Bake in the oven for 35-40 minutes. Serve the pudding warm drizzled with the reserved syrup and cream.
