  • 1 cup (70g) coarse fresh breadcrumbs
  • 2 teaspoons olive oil
  • 1 garlic clove, finely chopped
  • 1 teaspoon finely grated lemon rind
  • 1 tablespoon Always Fresh pitted black olives, finely chopped
  • 8 prosciutto slices
  • 8 large fresh sage leaves
  • 4 veal schnitzels, Heart Smart, cut in half crossways
  • Salt & freshly ground pepper
  • 2 bunches asparagus, trimmed
  • Steamed chat potatoes, to serve


  • Step 1
    Preheat oven to 180�C. Spread the breadcrumbs on a baking tray. Toast in the oven for 8-10 minutes or until golden. Transfer to a bowl.
  • Step 2
    Heat half the oil in a frying pan over a medium heat. Cook the garlic, stirring, for 30 seconds or until aromatic. Remove from the heat. Stir in lemon and olives. Add to the breadcrumbs. Mix well. Set aside.
  • Step 3
    Lay prosciutto out on a clean flat surface. Top with a sage leaf. Place a piece of veal in the centre of each slice. Season with salt and pepper. Fold the prosciutto over to enclose. Heat the remaining oil in a large frying pan over a medium-high heat. In batches, cook the veal for about 1 1/2 minutes each side or until golden.
  • Step 4
    Meanwhile, cook the asparagus in boiling water for 3-4 minutes or until just tender, then drain. Sprinkle the breadcrumbs over the asparagus. Serve with the veal and steamed chat potatoes.
