Ingredients

  • 115g medium-grain rice
  • 700ml milk
  • 50g caster sugar
  • 1 vanilla bean, split
  • 1 cinnamon stick
  • 500g thick Greek-style yoghurt
  • Berries or poached rhubarb, to serve

Method

  • Step 1
    Bring rice, milk, sugar, vanilla and cinnamon to the boil over medium heat. Reduce heat to low (a simmer mat, from supermarkets and kitchenware shops, is best for this) and simmer for 30 minutes, stirring occasionally to prevent sticking. Cool slightly. To serve, remove vanilla pod and stir in yoghurt. Serve with fruit.
