  • 1 egg
  • 2 tablespoons cornflour
  • 600g pork fillet, thinly sliced
  • 440g can pineapple pieces in natural juice
  • 1/2 cup tomato sauce
  • 1/4 cup soy sauce
  • 2 tablespoons white vinegar
  • 2 tablespoons peanut oil
  • 1 large brown onion, halved, thinly sliced
  • 2 green onions, cut into 2.5cm lengths
  • 2 garlic cloves, crushed
  • 1/2 red capsicum, chopped
  • 1/2 green capsicum, chopped
  • Steamed jasmine rice, to serve


  • Step 1
    Whisk egg and half the cornflour together in a bowl. Add pork. Stir to combine.
  • Step 2
    Drain pineapple, reserving 2 tablespoons of juice. Place remaining cornflour in a bowl. Add reserved juice. Stir until smooth. Add tomato sauce, soy sauce and vinegar. Stir to combine.
  • Step 3
    Heat a wok over medium-high heat until hot. Add 1 tablespoon oil. Swirl to coat. Stir-fry pork, in batches, for 1 to 2 minutes or until browned. Transfer to a bowl.
  • Step 4
    Add remaining oil to wok. Swirl to coat. Add onions and garlic. Stir-fry for 2 minutes or until softened. Add capsicum. Stir-fry for 3 to 4 minutes or until capsicum starts to soften.
  • Step 5
    Return pork and any juices to wok. Add sauce mixture and pineapple. Stir-fry for 2 to 3 minutes or until sauce boils and thickens. Serve with steamed rice.
