  • 4 large firm pears, peeled, halved, cored
  • 125ml (1/2 cup) orange juice
  • 1 cinnamon stick
  • Tamar Valley Greek Style Yoghurt, to serve

    To make the apricot sauce, combine the apricots, orange juice and rind, vanilla bean and cinnamon stick in a saucepan. Set aside for 30 minutes to develop the flavours.

    Bring apricot mixture to the boil over medium-high heat. Reduce heat to low and simmer for 20 minutes or until liquid has almost evaporated. Cool completely. Discard vanilla bean and cinnamon stick. Process apricot mixture, water and brandy in a food processor until smooth.
  • Step 3
    Meanwhile, place the pears, orange juice and cinnamon stick in a large saucepan over medium heat. Bring to the boil. Reduce heat to low and simmer, covered, turning pears halfway through cooking, for 15 minutes or until just tender. Set aside, covered, for 5 minutes to cool slightly.
  • Step 4
    Serve pears hot or cold with apricot sauce and Greek yoghurt.
