Ingredients

  • 400g beef sirloin or rump steak (2.5cm thick)
  • 2 tsp peanut oil
  • 200g rice vermicelli noodles
  • 200g snow peas, trimmed, halved lengthways
  • 1 Lebanese cucumber, halved lengthways, sliced on angle
  • 250g cherry tomatoes, halved
  • 1 red capsicum, thinly sliced
  • 1/2 bunch mint, leaves picked
  • 1/2 bunch coriander, leaves picked
  • 1/3 cup unsalted roasted peanuts, chopped
  • Lime wedges, to serve
  • Chopped red chilli, to serve

Method

  • Step 1
    To make the dressing, combine all ingredients in a small jug, stirring to dissolve sugar.
  • Step 2
    Rub steak with oil, season and bring to room temperature.
  • Step 3
    Heat a large frying pan or char-grill pan over high heat. Add steak and cook for 2-3 minutes, each side, for medium rare, or until cooked to your liking. Remove from pan and rest for 5 minutes.

    . Meanwhile, place noodles in a heatproof bowl. Cover with boiling water and stand for 5 minutes or until tender. Drain, rinse under cold water. Drain well. Toss 2 tbsp dressing through noodles, then place in serving bowls.

    Mix vegetables and herbs in a bowl to combine and place on top of noodles.
  • Step 6
    Thinly slice rested steak across the grain. Arrange over salad. Drizzle with remaining dressing and sprinkle with peanuts. Serve with lime and chilli.
