Ingredients

1 cob loaf (20 cm)

200g vintage cheddar, cut into 3cm cubes

1 spring onion, trimmed and cut into halves

200g rindless bacon rashers, trimmed and cut into pieces

20g olive oil

250g cream cheese, softened and cut into pieces

250g sour cream
Method

Step 1Preheat oven to 180C. Line a baking tray with baking paper and set aside.

Step 2Slice off the top of the cob loaf to form a lid, then scoop out the bread from the centre leaving 1 1/2 cm thick edge around the outside. Tear bread into bite-sized pieces and set aside.

Step 3Place cheddar and spring onion/shallot into mixing bowl and chop 10 sec/speed 9. Transfer into a bowl and set aside.

Step 4Place bacon and olive oil into mixing bowl and chop 5 sec/speed 7. Scrape down sides of mixing bowl with spatula, then cook 5 min/90C/speed 1.

Step 5Add cream cheese, sour cream and reserved grated cheese mixture and combine 15 sec/speed 3.

Step 6Transfer dip mixture into cob loaf and top with lid. Wrap cob loaf in aluminium foil, then place onto prepared baking tray and bake for 45 minutes.

Step 7Place reserved bread pieces around the outside of the cob loaf on baking tray, then bake for a further 15 minutes. Serve immediately.
