  • 1 1/2 cups water
  • 1 cup sugar
  • 1 cinnamon stick
  • 1 vanilla bean, split, seeds scraped
  • 40g butter
  • 2 teaspoons sea salt flakes
  • 1 teaspoon caster sugar
  • 1/4 teaspoon ground cinnamon
  • 400g chestnuts, roasted, peeled (see notes)


  • Step 1
    Stir water, 1 cup sugar, cinnamon stick, split vanilla bean and seeds and butter in a saucepan over low heat until sugar dissolves. Bring to boil. Reduce to medium-low. Simmer for 25-30 minutes or until dark golden.
  • Step 2
    Combine sea salt flakes, 1 tsp caster sugar and ground cinnamon in a bowl.
  • Step 3
    Place chestnuts on a lined baking tray. Pour toffee over nuts. Scatter with salt mixture. Cool.
