  • 1kg vongoli
  • 125ml (1/2 cup) dry white wine
  • 125ml (1/2 cup) water
  • 400g linguine
  • 2 teaspoons olive oil
  • 1 small brown onion, halved, finely chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon dried chilli flakes
  • 2 x 250g punnets grape tomatoes, halved lengthways
  • 1/2 cup coarsely chopped fresh continental parsley
  • Freshly ground black pepper


  • Step 1
    Wash the vongoli under cold running water. Place the vongoli, wine and water in a large saucepan over medium heat. Cook, covered, for 5 minutes or until shells open (discard any vongoli that do not open). Use a slotted spoon to transfer vongoli to a large heatproof bowl. Strain the cooking liquid through a fine sieve into a heatproof jug and set aside.
  • Step 2
    Reserve 16 vongoli in their shells. Remove the remaining vongoli from their shells. Discard shells.
  • Step 3
    Cook linguine in a large saucepan of boiling water following packet directions or until al dente. Drain and return to pan.

    Meanwhile: heat the oil in a frying pan over medium heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the garlic and chilli flakes and cook, stirring, for 1 minute or until aromatic. Increase heat to medium-high. Add the tomato and cook, stirring occasionally, for 2-3 minutes or until tomato softens slightly. Add the reserved cooking liquid and cook for 3 minutes or until sauce thickens slightly. Add the vongoli meat and parsley and stir to combine.
  • Step 5
    Add tomato mixture to the pasta and gently toss until well combined. Divide pasta among shallow serving bowls. Top with reserved vongoli and season with pepper. Serve immediately.
