  • 375g penne rigate
  • 425g can tuna in oil
  • 1 garlic clove, crushed
  • 2 teaspoons finely grated lemon rind
  • 1/4 cup lemon juice
  • 2 tablespoons drained capers
  • 1 cup fresh flat-leaf parsley leaves


  • Step 1
    Cook pasta in a large saucepan of boiling salted water, following packet directions, until tender. Drain, reserving 1/4 cup cooking liquid.
  • Step 2
    Return pasta to pan. Drain tuna, reserving 2 tablespoons oil. Using a fork, flake tuna. Add garlic, lemon rind, lemon juice, capers, parsley, tuna, reserved oil and reserved liquid to pasta. Toss to combine. Season with salt and pepper. Serve.
