  • 2 tablespoons olive oil
  • 1 leek, sliced
  • 2 garlic cloves
  • 2 cups arborio rice
  • 1/2 cup white wine
  • 1 litre Massel chicken style liquid stock
  • 55g dried peas
  • 1 cup shredded parmesan
  • 425g can tuna


  • Step 1
    Heat 2 tablespoons olive oil in a large saucepan over a medium heat. Add 1 leek, sliced, and 2 garlic cloves, crushed, and cook until soft. Stir in 2 cups arborio rice. Add 1/2 cup white wine and cook until almost evaporated.
  • Step 2
    Using 1 litre chicken stock, heated until hot, gradually add 1 cup at a time to the rice, stirring constantly until the liquid is absorbed between each addition. Add 55g dried peas and cook for 3 minutes.
  • Step 3
    Stir in 1 cup shredded parmesan and 425g can tuna, drained. Serve topped with extra parmesan.
