  • 2 cups (440g) caster sugar
  • 1 vanilla bean, halved lengthways
  • 8 firm ripe peaches
  • 400g plain sponge cake, chopped
  • 16 scoops vanilla ice cream
  • Hazelnuts, roasted, chopped, to serve, if desired


  • Step 1
    Stir sugar, vanilla bean and 1 litre water in a large saucepan over low heat until sugar dissolves. Bring to the boil, add peaches and simmer for 5-8 minutes until tender. Use a slotted spoon to transfer to a bowl to cool.
  • Step 2
    Boil the syrup for 15-20 minutes until thick. Discard vanilla bean and cool.
  • Step 3
    Meanwhile, melt Choc Duo and cream in a pan over medium heat. Cool.
  • Step 4
    Peel peaches, halve and cut into wedges.
  • Step 5
    Divide cake between 8 serving glasses and drizzle with syrup. Top with ice cream, sauce and half the peaches. Repeat layer. Top with hazelnuts.
