  • 60ml (1/4 cup) fish sauce
  • 60ml (1/4 cup) lime juice
  • 2 tablespoons water
  • 1 1/2 tablespoons coconut sugar
  • 1 long fresh red chilli, finely chopped
  • 1 teaspoon finely grated lime rind
  • 1 small garlic clove, crushed
  • 280g (2 cups) leftover shredded cooked turkey or chicken
  • 2 green shallots, thinly sliced diagonally
  • 1 baby butter lettuce
  • 1 cup fresh herbs (fresh coriander and mint leaves)
  • 1 large carrot, peeled, cut into matchsticks


  • Step 1
    For pancakes, combine dry ingredients in a large bowl. Make a well in the centre. Add coconut milk and 1 cup water. Whisk until smooth. Cover batter and place in fridge for 1 hour to rest.
  • Step 2
    Combine the fish sauce, lime juice, water, sugar, chilli, lime rind and garlic in a small bowl.
  • Step 3
    Place the turkey and shallots in a bowl. Stir in 2 tablespoons fish sauce mixture.
  • Step 4
    Heat a 22cm (base measurement) non-stick frying pan over medium-high heat. Brush with coconut oil to grease. Stir remaining water into batter. Add 1/2 cup batter to pan and tilt to coat base. Cook for 4-5 minutes or until underside is golden. Transfer to a plate. Cover with a tea towel. Repeat to make 8 pancakes in total.
  • Step 5
    Fill the pancakes with lettuce, turkey mixture, herbs, sprouts and carrot. Drizzle with the dressing.
