  • 8 (600g) Italian sausages
  • 1 bunch asparagus, trimmed, halved
  • 1 small cos lettuce, leaves separated, washed, dried
  • 3 egg tomatoes, quartered lengthwise
  • 150g artichoke hearts marinated in oil, quartered
  • 25g parmesan, coarsely grated
  • 1 tablespoon olive oil
  • Ground black pepper, to taste
  • 4 crusty bread rolls, to serve

    Heat a heavy frying pan or chargrill pan over medium high heat and cook the sausages, turning frequently, for 10 minutes or until cooked.

    Meanwhile, cook asparagus in a saucepan of simmering water for 2-3 minutes or until just tender (see microwave tip). Drain.
  • Step 3
    Tear the lettuce leaves in half and place in a large bowl. Remove sausages from pan when cooked and keep warm.

    Add tomatoes to the pan. Cook over medium high heat, turning once, for 1 minute.
  • Step 5
    Add cooked tomatoes, asparagus, artichokes and parmesan to the lettuce.
  • Step 6
    Cut sausages diagonally into halves and add to salad. Drizzle with olive oil and toss. Sprinkle with pepper and serve with bread rolls.
