2 cups (300g) frozen broad beans

375g pkt veal tortellini

6 slices prosciutto

1/4 cup (60ml) extra virgin olive oil

350g mixed medley tomatoes, halved

1/2 cup (60g) pitted, Sicilian olives, halved

1 tbs balsamic vinegar

120g pkt Coles Australian Baby Rocket

100g goat�s cheese, crumbled

Step 1Cook the broad beans in a large saucepan of boiling water for 2 mins or until heated through. Refresh under cold water. Drain. Peel. Place in a bowl.

Step 2Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.

Step 3Meanwhile, heat a large deep frying pan over medium-high heat. Cook the prosciutto for 1 min each side or until crisp. Transfer to a plate and set aside to cool slightly. Tear into pieces.

Step 4Heat oil in the pan. Add the tomato and cook, tossing, for 2 mins or until the tomato begins to collapse. Add broad beans, pasta, olive and vinegar. Toss until well combined.

Step 5Divide the rocket and pasta mixture among serving plates. Top with prosciutto and goat�s cheese.
