  • 6 slices prosciutto
  • 1/4 cup (60ml) extra virgin olive oil

    Cook the broad beans in a large saucepan of boiling water for 2 mins or until heated through. Refresh under cold water. Drain. Peel. Place in a bowl.

    Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well.

    Meanwhile, heat a large deep frying pan over medium-high heat. Cook the prosciutto for 1 min each side or until crisp. Transfer to a plate and set aside to cool slightly. Tear into pieces.

    Heat oil in the pan. Add the tomato and cook, tossing, for 2 mins or until the tomato begins to collapse. Add broad beans, pasta, olive and vinegar. Toss until well combined.
  • Step 5
    Divide the rocket and pasta mixture among serving plates. Top with prosciutto and goat�s cheese.
