  • 1 bunch rhubarb, trimmed, cut into 4cm pieces
  • 1 whole star anise
  • 1 tablespoon water
  • 430g (2 cups) caster sugar
  • 2 x 125g punnets raspberries
  • 500ml (2 cups) milk
  • 450ml thickened cream
  • 2 teaspoons vanilla extract
  • 180g white chocolate, finely chopped
  • 10 egg yolks
  • 80ml (1/3 cup) water, extra
  • Raspberries, extra, to serve
  • Chopped pistachio kernels, to serve


  • Step 1
    Stir the rhubarb, star anise, water and 70g (1/3 cup) sugar in a large saucepan over low heat for 2 minutes or until sugar dissolves. Increase heat to high. Bring to the boil. Simmer for 4 minutes or until the rhubarb starts to soften. Stir in raspberries. Simmer for 1 minute or until warmed through. Divide among six 375ml (1 1/2 cups) ovenproof cups or dishes. Place in the fridge for 30 minutes to chill.
  • Step 2
    Preheat oven to 160C. Bring the milk, cream and vanilla almost to the boil in a saucepan over medium heat. Remove from heat. Stir in the chocolate until it melts.
  • Step 3
    Meanwhile, whisk the egg yolks and 160g (2/3 cup) of remaining sugar in a heatproof bowl until well combined.
  • Step 4
    Whisk hot cream mixture into egg mixture. Strain into a jug. Pour over the back of a large spoon into the cups. Place in a large roasting pan. Pour enough boiling water into the pan to reach halfway up the sides of the cups. Bake for 40 minutes or until just set. Remove cups from roasting pan and set aside for 30 minutes to cool slightly. Cover with plastic wrap and place in the fridge for 4 hours to set.
  • Step 5
    Stir extra water and remaining sugar in a saucepan over low heat until sugar dissolves. Increase heat to high. Brush down the side of the pan with a wet pastry brush. Bring to the boil. Cook for 8 minutes or until golden. Set aside until bubbles subside. Pour over the custards. Set aside for 5 minutes to set. Top with extra raspberries and pistachio.
