Ingredients

  • 1 bunch (about 100g) green grapes, washed, dried
  • 1 bunch (about 100g) black grapes, washed, dried
  • 215g (1 cup) caster sugar
  • 125ml (1/2 cup) water
  • Blue cheese, to serve
  • Cheddar, to serve
  • Brie, to serve
  • Water crackers, to serve
  • Baguette slices, to serve

Method

  • Step 1
    Line 2 baking trays with non-stick baking paper. Use kitchen scissors to cut grapes into clusters of 2-4 grapes.
  • Step 2
    Combine sugar and water in a heavy-based saucepan and stir over low heat until sugar dissolves. Increase heat to medium and gently boil, without stirring, occasionally brushing down the side of the pan with a pastry brush dipped in water, for 12-15 minutes or until golden. Set aside until bubbles subside.
  • Step 3
    Using tongs to hold the stem, gently dip a grape cluster into the toffee mixture and turn to evenly coat. Place grapes on prepared tray. Repeat with the remaining grapes and toffee. Set aside for 10 minutes or until toffee sets.
  • Step 4
    Arrange toffee grapes on a cheese board with blue cheese, cheddar and brie. Serve with crackers and baguette.
