  • 300g silken tofu, drained
  • 300ml thickened cream
  • 2 teaspoons vanilla extract
  • 1/4 cup (40g) pure icing sugar
  • 4 kiwifruit, peeled and sliced, (reserve 1 kiwifruit to decorate)
  • 1/4 cup (60g) caster sugar
  • 1/4 cup (60ml) melon liqueur
  • Mint leaves to decorate


  • Step 1
    Using an electric beater, beat tofu, cream, vanilla extract and icing sugar together until thick and fluffy. Cover and refrigerate.
  • Step 2
    In a blender place 3 kiwifruit, caster sugar and liqueur. Blend until smooth. Pour mixture through a fine sieve and discard pulp.
  • Step 3
    To serve, spoon tofu whip into individual serving dishes and drizzle with syrup. Decorate with remaining kiwifruit and mint leaves.
