Ingredients

  • 1 large waxy potato, peeled, cut into 1cm cubes
  • 300g green beans, trimmed, halved lengthways and cut into short lengths
  • 400g linguine or trofie (see below)
  • Grated parmesan, to serve

Method

  • Step 1
    If making your own trofie, put the flour in a bowl, sprinkle on a little salt, add the water and mix together to form a dough. Knead well until the dough is smooth and firm, adding more water if it seems dry. Let the dough rest for 30 minutes.
  • Step 2
    When you�re ready to make the trofie, pinch off a small piece of dough and rub it quickly between your palms to form the classic trofie twist shape. This may take a little practice, but it doesn�t need to look perfect to taste good. Continue until you have used all the dough. Leave to dry on a floured tea towel while you make the pesto.
  • Step 3
    For the pesto, wash the basil leaves and dry gently with paper towel. Place the garlic and salt in a mortar and crush with the pestle. Add the basil and continue crushing, using a rotary motion, sprinkling in a bit more sea salt to help the crushing. Add the pine nuts and keep pounding for another minute, then add the cheeses and a little of the olive oil. When you have a paste, transfer it to a bowl and stir the remaining olive oil through. (Or, put all the ingredients in a blender and pulse slowly to ensure the basil doesn�t get hot.) Set aside.
  • Step 4
    Fill a large saucepan with water, bring it to the boil and add some salt. Drop in the potato cubes and boil for 3 minutes. Add the beans and linguine, if using, and boil according to the packet instructions (usually 8�10 minutes, depending on how al dente you like your pasta).
  • Step 5
    If you are using hand-made trofie, boil the potatoes for 5 minutes before adding the beans, then in another 3 minutes add the trofie and boil for a further 3 minutes. (You can buy excellent commercially made trofie, but they will take longer to cook, so adjust times accordingly.)
  • Step 6
    Place a big dollop of pesto in a large bowl. Add a little cooking water to loosen it. Drain pasta, beans and potato and add to bowl. Toss gently. Top with the rest of the pesto; toss again. Sprinkle with parmesan.
