  • 8 vine-ripened tomatoes
  • 125g light cream cheese, softened
  • 1 lemon, rind finely grated, juiced
  • 425g can tuna in oil, drained, flaked
  • 3 green onions, thinly sliced
  • 2 tablespoons mint leaves, finely chopped


  • Step 1
    Preheat oven to 180C. Cut a thin slice from the top of each tomato. Set slices aside. Using a teaspoon, scoop out tomato flesh. Roughly chop flesh. Place tomato shells into a greased ceramic baking dish.
  • Step 2
    Place cream cheese and lemon rind into a bowl. Mix until well combined. Stir in half the tomato flesh, 2 tablespoons of lemon juice, tuna, onions and mint. Season with salt and pepper. Spoon tuna mixture into tomato shells. Place tomato tops over filling. Season with pepper.
  • Step 3
    Bake for 35 to 40 minutes or until tomatoes are just tender but still hold their shape. Serve warm or at room temperature with crusty bread and salad.
