  • 500g turkey mince
  • 2 spring onions, sliced
  • 1/4 cup (35g) dried cranberries
  • 2 garlic cloves, crushed
  • 1 small carrot, grated
  • 1 small zucchini, grated, squeezed to remove excess liquid
  • 1/3 cup (25g) panko breadcrumbs
  • 1 Coles Brand Australian Free Range Egg, lightly beaten
  • Vegetable oil, to deep-fry
  • 800g gold sweet potato, cut into small wedges
  • 1 tablespoon extra virgin olive oil
  • 80g brie, sliced
  • 60g baby rocket leaves
  • 2 tomatoes, sliced
  • 6 Coles Bakery Kaiser Rolls, split, toasted
  • 1/3 cup (100g) whole cranberry sauce


  • Step 1
    Combine the mince, spring onion, cranberries, garlic, carrot, zucchini, breadcrumbs and egg in a bowl. Season. Shape mixture into 6 patties. Place on a plate in the fridge for 10 mins to set.
  • Step 2
    Heat vegetable oil to 180C in a saucepan over medium heat (when oil is ready, a cube of bread turns golden brown in 15 seconds). Add the sweet potato, in batches, and cook for 5 mins or until golden and tender. Transfer to a plate lined with paper towel.
  • Step 3
    Heat the olive oil in a large frying pan on medium heat. Cook the patties for 5 mins each side or until cooked through, topping patties with brie for the last 3 mins of cooking.
  • Step 4
    Divide the rocket, tomato and patties among bun bases. Top with cranberry sauce and bun tops. Serve with sweet potato wedges.
