  • 1 tablespoon extra virgin olive oil, plus more for drizzling
  • 100g pancetta, chopped
  • 1/2 brown onion, finely chopped (about 3/4 cup)
  • 2 carrots (about 280g total), peeled, finely diced
  • 1 large parsnip (about 140g), peeled, inner core removed, finely diced
  • 1 small turnip (about 180g), peeled, finely diced
  • 4 garlic cloves, 3 finely chopped, 1 whole and peeled
  • 8 cups (2L) salt-reduced chicken stock
  • 1 cup (200g) dried green lentils
  • 150g Coles Bakery Pane di Casa Baguette*, cut diagonally into four 2cm-thick slices
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves
  • 20g piece parmesan, for grating


  • Step 1
    Heat a large pot over medium-high heat. Add extra virgin olive oil and pancetta and saut� for 5 mins or until pancetta is crisp. Using a slotted spoon, transfer pancetta to a plate. To the same pot, add onion, carrots, parsnip, turnip and chopped garlic. Reduce heat to medium and saut� for 7 mins or until vegetables have softened.
  • Step 2
    Add stock and lentils. Bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer gently for 18 mins or until lentils are tender but not bursting apart. Remove pot from heat and season with salt and pepper.
  • Step 3
    Meanwhile, heat a large skillet over medium-high heat. Brush both sides of bread with olive oil and cook for 2 mins each side or until toasted. Rub whole garlic clove over warm bread.
  • Step 4
    Divide soup among 4 bowls and sprinkle with pancetta and thyme leaves. Grate some parmesan over, drizzle with extra virgin olive oil and serve with bread.
