  • 1 garlic clove, halved
  • 6 red witlof or white witlof
  • 150g speck, rind removed, cut into batons
  • 150ml thickened cream
  • 40g (1/2 cup) coarsely grated gruyere
  • 35g (1/2 cup) fresh breadcrumbs


  • Step 1
    Preheat oven to 180?C. Grease a 25cm round ovenproof dish with butter. Rub with garlic and discard.
  • Step 2
    Bring a large saucepan of salted water to the boil over high heat. Add the witlof. Reduce heat to medium. Cook for 8 minutes or until tender. Drain and pat dry with paper towel. Arrange in prepared dish.
  • Step 3
    Meanwhile, cook the speck in a large non-stick frying pan over high heat for 5 minutes or until golden.
  • Step 4
    Sprinkle speck over the witlof. Top with cream, gruyere and breadcrumbs. Bake for 30-35 minutes or until golden.
