Ingredients

  • 1/2 cup (140g) Greek-style yoghurt
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon chilli flakes
  • 1 teaspoon ground ginger
  • 1.5kg Coles Australian Lamb Leg
  • 2 x 500g pkts Coles Roasting Vegetables with Garlic & Rosemary
  • 1/2 cup (140g) Greek-style yoghurt, extra
  • 1 teaspoon ground cumin, extra
  • 1/2 teaspoon chilli flakes, extra

Method

  • Step 1
    Preheat a covered barbecue on medium. Alternatively, preheat oven to 180C.
  • Step 2
    Combine the yoghurt, cumin, coriander, turmeric, chilli flakes and ginger in a large bowl.
  • Step 3
    Use a small sharp knife to make three cuts in top of the lamb. Add the lamb to the yoghurt mixture and turn to coat, rubbing the yoghurt mixture all over the lamb and into the cuts.
  • Step 4
    Place the lamb in a deep roasting pan. Cook in covered barbecue using indirect heat, or in oven, for 2? hours for medium or until cooked to your liking, adding the vegetables to the pan halfway through cooking. Set aside, covered with foil, for 10 mins to rest.
  • Step 5
    Meanwhile, combine the extra yoghurt, cumin and chilli flakes in a small bowl.
  • Step 6
    Arrange the lamb and vegetables on a serving platter. Thickly slice the lamb and serve with the yoghurt mixture.
