  • 8 medium kanzi apples, washed, dried
  • Sugar-coated fennel seeds, to decorate (see note)
  • 645g (3 cups) caster sugar
  • 80ml (1/3 cup) liquid glucose
  • 1 teaspoon white vinegar
  • 2 drops red or pink food colouring (optional)


  • Step 1
    Line 2 large baking trays with baking paper. Insert the sticks into the tops of the apples, pushing them halfway through to secure. Scatter candied fennel seeds over a prepared tray. Set aside.
  • Step 2
    Place the sugar, glucose, vinegar and 250ml (1 cup) water in a saucepan. Stir over low heat for 5 minutes or until the sugar dissolves. Use a pastry brush dipped in water to brush down the side of the pan occasionally. Increase heat to high and bring to the boil. Reduce heat to medium and simmer, without stirring, for 25-30 minutes or until the toffee deepens in colour and reaches 150C (hard crack stage) on a cook’s thermometer.
  • Step 3
    Remove the pan from the heat. Allow the bubbles to subside, then add food colouring, if using, and swirl gently to mix. Working quickly, dip each apple into the toffee, swirling to coat. Drain excess, then quickly and lightly roll in the fennel seeds. Place on the remaining prepared tray and set aside for 30 minutes to set.
