Ingredients

  • 5 saladette truss tomatoes
  • 2 teaspoons Bertolli extra light olive oil
  • 1 loaf crusty Italian style bread
  • 3 garlic cloves, peeled
  • 225g mozzarella, thinly sliced
  • Praise balsamic dressing, to serve
  • 3 tablespoons shredded fresh basil leaves
  • Salt & freshly ground pepper

Method

  • Step 1
    Cut the tomatoes into 5mm thick slices, discarding the ends. Place in a bowl. Drizzle with the olive oil. Toss gently to coat.
  • Step 2
    Cut the bread into 2 cm thick slices. Toast the bread until golden. Rub each side of the bread with the garlic.
  • Step 3
    Arrange the mozzarella and tomato slices on the bread. Just before serving, drizzle with the dressing and scatter over the basil. Season lightly with salt and pepper. Serve immediately.
