Ingredients

  • 1/2 x 440g packet shelf-fresh thin egg noodles
  • 185g can tuna in oil, drained, flaked
  • 1/2 cup frozen peas
  • 1 medium carrot, grated
  • 2 eggs, lightly beaten
  • 1/3 cup plain flour
  • 2 tablespoons rice bran oil
  • 8 small iceberg lettuce leaves, torn
  • 150g cherry tomatoes, quartered
  • 1 Lebanese cucumber, cut into ribbons
  • Sweet chilli sauce, to serve

Method

  • Step 1
    Place noodles in a heatproof bowl. Cover with boiling water. Stand for 1 minute. Separate noodles with a fork. Drain. Using scissors, roughly chop noodles. Place noodles, tuna, peas, carrot, egg and flour in a bowl. Season with salt and pepper. Mix until well combined.
  • Step 2
    Heat oil in large non-stick frying pan over medium heat. Spoon 1/4 cup mixture into pan. Gently flatten top. Repeat to make 3 more fritters. Cook fritters for 3 to 4 minutes on each side or until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with remaining mixture to make a total of 12 fritters.
  • Step 3
    Arrange lettuce on serving plates. Top each with 3 fritters, tomato and cucumber. Drizzle with sweet chilli sauce. Serve.
