Ingredients

  • 250g fresh green beans, topped
  • 250g fresh butter beans, topped
  • 1 lemon
  • 2 185g cans tuna in olive oil
  • 1/2 medium red onion, finely sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 garlic clove, crushed
  • Salt & ground black pepper, to taste

Method

  • Step 1
    Add the green and butter beans to a large saucepan of salted boiling water and cook for 2 minutes or until tender crisp. Drain and rinse under cold running water to refresh. Drain well and then transfer to a large bowl. ·
  • Step 2
    Remove the rind from the lemon with a vegetable peeler. Remove white pith from the rind and cut the rind into thin strips. (Alternatively, use a zester.)Juice the lemon.
  • Step 3
    Break the tuna into large pieces. Add the tuna to the beans with half the lemon rind strips and the red onion. ·
  • Step 4
    Place the reserved tuna oil, extra virgin olive oil, 1 tablespoon of the lemon juice, balsamic vinegar and garlic in a small bowl and whisk to combine. Pour the dressing over the salad, season generously with salt and pepper and toss gently to combine. Serve at room temperature garnished with the remaining lemon rind strips.
