Ingredients

  • Olive oil, for greasing
  • 500g (about 2 medium) desiree potatoes, peeled, thinly sliced
  • 4 eggs
  • 250g (1 cup) sour light cream
  • Ground black pepper, to taste
  • 1 bunch English spinach, washed, trimmed, shredded
  • 4 green shallots, thinly sliced
  • 150g semi-dried tomatoes, roughly chopped
  • 150g grilled eggplant, roughly chopped
  • 60g goat’s cheese, crumbled

Method

  • Step 1
    Brush a deep heat-resistant, microwave-safe pie dish 25cm in diameter and 6cm deep (2-litre/8-cup capacity) with oil to grease.
  • Step 2
    Arrange potatoes evenly over base of prepared dish. Cover with a lid or plastic wrap and cook for 5-6 minutes on High/ 850watts/100% or until just tender when tested with a skewer.
  • Step 3
    Meanwhile, whisk together the eggs, sour light cream and pepper in a mixing bowl until well combined. Pour 125mls (1/2 cup) of the mixture evenly over the potatoes and then gently shake the dish to allow the mixture to run between the potato layers. Cook, uncovered, for 3 minutes on Medium-High/650watts/70%.
  • Step 4
    Top with the English spinach, green shallots, semi-dried tomatoes, eggplant and goat’s cheese. Pour over remaining egg mixture and gently shake the dish again. Cook, uncovered, for 10-12 minutes on Medium-High/650watts/70% or until the egg mixture is almost set.
  • Step 5
    Preheat a grill on medium-high. Place the flan under preheated grill for 2-3 minutes or until lightly browned.
  • Step 6
    Serve warm or at room temperature.
