  • 3 (about 400g) carrots, peeled
  • 250g broccoli
  • 2 (about 235g) zucchini


  • Step 1
    Diagonally slice the carrots, cut the broccoli into florets and thinly slice the zucchini. Cut each vegetable into even-sized pieces so they will cook at the same rate. Use a small sharp knife to cut a cross in the stems of the broccoli – this will help microwaves penetrate them easily, cooking the stems without overcooking the flowers. Wash the vegetables and leave the water clinging to them (in most cases, the water that clings to vegetables after washing is all that’s needed during cooking).
  • Step 2
    When cooking in the microwave, you need to use a dish that is microwave safe. To check if a dish or plate is microwave safe, place a heatproof microwave-safe coffee cup containing 185ml (3/4 cup) water on the centre of it and heat, uncovered, on High/800watts/100% for 1 minute. If the dish is cold and the water is warm, the dish is safe to use. If the dish is warm and the water is cold, the dish is not suitable. Vegetables are best cooked in a shallow round dish – this is to avoid cold spots in corners and ensure the vegetables are no more than 2-3 deep. Arrange the vegetables in the dish. Because microwaves cook food from the outer edge to the centre, the vegetables need to be arranged according to their density (if you’re not sure of a vegetable’s density, work in order of hard [dense] to soft [porous]). Place the carrots around the outer edge of the dish, followed by the broccoli (with the stems facing out) and then the zucchini.
  • Step 3
    When it comes to covering food you’re going to cook in the microwave, the rules are generally the same as conventional cooking. Vegetables are usually covered when cooked, so cover the dish with a lid or plastic wrap. Check the box to ensure the wrap is suitable for the microwave. (Glad makes a microwave wrap that is stronger, more durable and can tolerate higher temperatures than the regular variety.) There is no need to pierce a hole in the wrap.
  • Step 4
    Place the dish in the microwave and cook on High/800watts/100% for 7 minutes. Set the vegetables aside for 1-2 minutes either in or out of the microwave as they will continue to cook. Check the vegetables are tender and cooked to your liking – cook, checking after 1 minute, for 1-2 minutes longer if necessary. Remember, when you remove the lid or plastic wrap, lift it away from you so the steam doesn’t scald your hands.
  • Step 5
    Meanwhile, to make the lemon thyme vinaigrette, combine the oil, lemon juice, lemon thyme, sugar, mustard, and salt and pepper to taste in a screw-top jar. Shake well to combine.
  • Step 6
    Pour the dressing over the vegetables and serve immediately.
