Ingredients

  • 2 navel oranges
  • 1 lime
  • 3 mandarins
  • 3 tangelos
  • 1/4 cup shredded fresh mint leaves
  • 150g (2/3 cup) sugar
  • 250mls (1 cup) water
  • Thickened cream or vanilla ice-cream, to serve
  • Almond biscuits or biscuits of your choice, to serve

Method

  • Step 1
    Remove rind from 1 orange and the lime using a vegetable peeler. Set aside the fruit. Using a small sharp knife, remove the white pith from the rind and then cut into thin strips. Set aside.
  • Step 2
    Peel remaining orange, mandarins and tangelos, and remove the white pith from all the fruit including the reserved orange. Cut fruit into 5mm-thick slices and arrange in layers in a serving bowl, sprinkling some shredded mint between each layer.
  • Step 3
    Combine the sugar and water in a saucepan, and stir over medium heat until sugar dissolves. Bring to the boil and add reserved strips of citrus find. Reduce heat to medium and boil for 10 to 15 minutes or until the rind is translucent and syrup has reduced slightly (see microwave tip).
  • Step 4
    Remove from heat, stir in the juice from the reserved lime and then pour over the fruit in the serving dish. Serve warm with cream and biscuits.
