  • 1 tablespoon olive oil
  • 700g medium green prawns, peeled
  • 2 large red capsicums, deseeded, thinly sliced
  • 400g green beans, trimmed
  • 515g jar Kan Tong Sweet & Sour Cooking Sauce
  • 250g pkt Uncle Ben’s Express Basmati Rice
  • 8 iceberg lettuce leaves, trimmed
  • 1 shallot, thinly sliced


  • Step 1
    Heat 1 teaspoon of the oil in a large deep frying pan or wok over medium-high heat. Add half the prawns. Stir-fry for 2-3 minutes or until just cooked through. Transfer to a plate. Cover to keep warm. Repeat with 1 teaspoon of the remaining oil and the remaining prawns.
  • Step 2
    Heat remaining oil in the pan or wok. Add capsicum and beans. Stir-fry for 2-3 minutes or until tender crisp. Return the prawns to the pan or wok. Add Kan Tong cooking sauce. Stir-fry until well combined and the sauce is heated through. Remove from the heat.
  • Step 3
    Heat the rice following packet directions. Divide the lettuce leaves among serving plates. Divide the rice among the lettuce leaves. Top with the stir-fry and sprinkle with the shallot.
