  • 2 tablespoons canola oil
  • 1/3 cup blanched almonds
  • 600g Coles RSPCA Approved Chicken Thigh Fillets, sliced
  • 1 red capsicum, thinly sliced
  • 1 red onion, cut into thin wedges
  • 175g green beans, trimmed, halved
  • 1 bunch baby broccoli, cut into thirds
  • 1/3 cup Anathoth Farm Sweet Chilli Relish
  • 1 tablespoon gluten-free soy sauce
  • 1/2 cup coriander leaves
  • Steamed jasmine rice, to serve


  • Step 1
    Heat 2 teaspoons of oil in a wok or large deep frying pan over high heat. Stir-fry almonds for 1-2 mins or until golden. Drain on paper towel.
  • Step 2
    Heat 1 tablespoon of remaining oil in wok over high heat. Stir-fry chicken for 5 mins or until golden and cooked through. Transfer to a plate.
  • Step 3
    Heat remaining oil in the wok over high heat. Stir-fry capsicum, onion, beans and broccoli for 2 mins. Add 1/4 cup water. Stir-fry for 2-3 mins. Add chicken, relish and soy sauce. Season with pepper. Stir-fry until heated through. Top with almonds and coriander. Serve with rice.
