  • 1 tablespoon olive oil
  • 4 veal loin butterfly steaks
  • 1 1/2 cups passata
  • 120g baby spinach leaves
  • 2/3 cup grated mozzarella cheese
  • 200g steamed green beans, to serve

    Preheat oven to 200°C. Heat oil in a frying pan over medium- high heat. Add 2 veal steaks. Cook for 2 minutes each side or until browned. Remove to an ovenproof dish. Repeat with remaining veal.

    Spoon tomato passata over veal. Top with spinach. Sprinkle with mozzarella. Bake for 15 to 20 minutes or until veal is cooked through and top is golden. Serve with beans.
