  • 100g vermicelli noodles
  • 2 tablespoons vegetable oil
  • 2 spring onions, sliced
  • 1/4 cup ABC Sweet Soy sauce, plus extra to serve
  • 225g can water chestnuts, chopped
  • 1 medium carrot, grated
  • 8 iceberg lettuce leaves
  • 1/4 cup coriander leaves
  • 1/2 red long chilli, chopped
  • 1/4 cup crushed peanuts


  • Step 1
    Soak noodles in boiling water for 5 mins, until soft, then drain. Cut into 5cm lengths.
  • Step 2
    Heat oil in a frying pan over high heat. Add spring onions and mince and cook for 5-10 mins, until browned, breaking up any lumps with the back of a wooden spoon. Add sweet soy sauce, water chestnuts, carrot and noodles and stir to combine.
  • Step 3
    Spoon mince mixture into lettuce cups and top with coriander, chilli and nuts, then drizzle with a little extra sweet soy sauce.
