  • 3 packham pears, cored, cut into 2cm pieces
  • 2 cinnamon sticks
  • 1 star anise
  • 2 teaspoons caster sugar
  • Star anise, to serve (optional)


  • Step 1
    Place pear, cinnamon sticks, star anise and 4 1/2 cups cold water in a saucepan over medium heat. Bring to the boil. Reduce heat to low. Simmer, partially covered, for 10 to 12 minutes. Cover. Set aside for 10 minutes to let flavours develop.
  • Step 2
    Strain mixture into a heatproof jug. Add sugar. Stir until dissolved. Pour into warmed glasses. Serve with star anise (optional).
