  • 800g seedless grapes
  • 3/4 cup caster sugar
  • 1/4 cup water
  • 200g low-fat ricotta cheese*
  • 1 tablespoon finely chopped glace ginger


  • Step 1
    Remove grapes from stalks. Place grapes onto a lined baking tray.
  • Step 2
    Place sugar and water into a small saucepan over low heat. Stir until sugar dissolves, brushing down the side of the saucepan with a wet pastry brush to remove any sugar crystals. Increase heat to high. Bring to the boil. Boil, uncovered, without stirring, for 8 to 10 minutes, or until toffee turns a light golden colour. Pour toffee over grapes. Stand for 5 minutes to cool.

    Using an electric mixer, beat ricotta until almost smooth. Fold through ginger.
  • Step 4
    Divide toffeed grapes between 4 serving bowls. Top with ginger ricotta. Serve.
