  • 200g green beans, topped, sliced diagonally
  • 1 bulb baby fennel, trimmed, very thinly sliced
  • 1 small red onion, peeled, halved, very thinly sliced
  • 1 lemon, halved lengthways
  • 2 tablespoons olive oil
  • 1/4 teaspoon sugar
  • Salt & ground black pepper
  • 125g cans tuna slices in vegetable oil, drained


  • Step 1
    Cook beans in a saucepan of boiling salted water for 1-2 minutes or until tender crisp. Drain, refresh under cold running water and pat dry with paper towel. Combine the beans, fennel and red onion in a bowl.
  • Step 2
    Juice half the lemon, cut the remaining half into 4 wedges and reserve. Combine 1 tablespoon of the lemon juice with the olive oil, sugar and salt and pepper in a screw-top jar. Shake well to combine. Pour dressing over bean salad and toss to combine. Place the salad onto individual plates. Top with tuna slices and sprinkle with extra pepper to taste. Serve with the lemon wedges
