Ingredients

  • 1 tablespoon olive oil
  • 1.5kg diced beef casserole steak (gravy beef)
  • 1 onion, halved and sliced
  • 3 lemon grass stalks, white part only, quartered
  • 4 whole star anise (or 1/2 teaspoon ground star anise)
  • 8cm piece fresh ginger, peeled, quartered
  • 3 cups (750ml) Massel beef stock
  • 1/2 cup (125ml) brandy
  • 1/4 cup (70g) tomato paste
  • 4 carrots, peeled, cut into 2cm thick slices
  • Salt, to season
  • 2 tablespoons cornflour
  • 2 tablespoons water
  • Steamed rice, to serve

Method

  • Step 1
    Heat 1 tablespoon olive oil in a frying pan over high heat. Cook in batches 1.5kg diced casserole steak (gravy beef) until golden. Transfer to a 3.5-litre crockpot.
  • Step 2
    Add 1 onion, halved and sliced, 3 lemon grass stalks, white part only, quartered, 4 whole star anise (or 1/2 teaspoon ground star anise) and 8cm piece fresh ginger, peeled, quartered, to the frying pan. Cook for 5-8 minutes or until golden. Transfer to the crockpot with 3 cups (750ml) beef stock, 1/2 cup (125ml) brandy and 1/4 cup (70g) tomato paste.
  • Step 3
    Cook, covered, on Low for 4 hours or High for 2 hours or until the beef is tender. Add 4 carrots, peeled, cut into 2cm thick slices. Season well with salt. Cook, covered, on Low for a further 2-4 hours or on High for 1-2 hours. Combine 2 tablespoons cornflour with 2 tablespoons water and stir into the stew until the sauce has thickened slightly. Serve stew with steamed rice.
