Ingredients

  • 125mls (1/2 cup) water
  • 75g (1/2 cup) currants
  • 25g hazelnuts, finely chopped
  • 2 tablespoons brown sugar
  • 2 tablespoons honey
  • 1 tablespoon molasses
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 medium apples (like golden delicious, lady williams, fuji or pink lady), washed, cored

Method

  • Step 1
    Preheat oven to 180?C.
  • Step 2
    Combine the water, currants, hazelnuts, brown sugar, honey, molasses, cinnamon and nutmeg in a medium bowl.
  • Step 3
    Place the cored apples into an ovenproof dish and spoon the currant mixture into the centre of the apples to fill.
  • Step 4
    Bake in preheated oven for 35-45 minutes or until the apples are tender when tested with a skewer.
  • Step 5
    Remove from oven and place an apple on each serving plate. Spoon the cooking liquid from the ovenproof dish over the apples and serve immediately.
