  • 8 egg yolks
  • 1/2 cup (100g) caster sugar
  • 1/2 cup (125ml) marsala or madeira wine
  • Savoiardi (sponge finger biscuits), to serve

Method

  • Step 1
    Place the egg yolks in a large, heatproof bowl. Use an electric mixer to whisk until pale and fluffy. Add the sugar and continue whisking for 5 minutes or until mixture doubles in size.
  • Step 2
    Place the bowl over a saucepan of simmering water (making sure the bottom of the bowl doesn’t touch the water). Gradually add the marsala while continuously whisking for 10 minutes or until mixture is light and fluffy and has doubled in size.
  • Step 3
    Pour the zabaglione among serving glasses. Serve immediately with savoiardi, if desired.
