  • 6 capsicum (we used red, yellow and orange)
  • 4 zucchini, halved lengthways, thickly sliced
  • olive oil cooking spray
  • 250g cherry tomatoes, halved
  • 360g cherry bocconcini cheese (see note), drained
  • 1/2 cup basil leaves


  • Step 1
    Preheat oven to 220°C. Halve capsicum, remove and discard seeds. Place, skin side up, on a lined baking tray. Add zucchini. Spray with oil. Roast for 30 minutes or until capsicum has collapsed and skin is golden. Place capsicum in a plastic bag. Seal and stand for 5 minutes (see tip). Remove skin from capsicum. Cut capsicum flesh into thick strips. Place in a large bowl. Add zucchini.
  • Step 2
    Make lemon dressing: Place lemon rind, 1/4 cup lemon juice, oil and sugar in a screw-top jar. Secure lid and shake until well combined.
  • Step 3
    Add tomatoes, bocconcini, basil and dressing to capsicum. Season with salt and pepper. Toss gently tocombine. Serve.
