  • 450g pkt hokkein noodles
  • 1/2 cup sweet chilli sauce
  • 2 limes, juiced
  • 2 tablespoons peanut oil
  • 2 carrots, peeled and cut into matchsticks
  • 1 red capsicum, deseeded, and cut into thin strips
  • 4 cups shredded Chinese cabbage
  • 1 bunch coriander, leaves picked
  • 1 bunch mint, leaves picked
  • 2 cups bean sprouts
  • Sesame seeds
  • Barbequed chicken skewers


  • Step 1
    Place 450g pkt hokkein noodles in a heatproof bowl and pour over boiling water. Set aside for 10 minutes. Drain well and transfer to a large bowl. Whisk together 1/2 cup sweet chilli sauce, 2 limes, juiced, and 2 tablespoons peanut oil.
  • Step 2
    Combine the noodles, 2 carrots, peeled and cut into matchsticks, 1 red capsicum, deseeded, and cut into thin strips, 4 cups shredded Chinese cabbage, 1 bunch coriander, leaves picked, 1 bunch mint, leaves picked, and 2 cups bean sprouts.
  • Step 3
    Add the dressing to the salad and toss. Place in a serving bowl and scatter with sesame seeds, if desired. Serve with barbequed chicken skewers.
