Ingredients

  • 6 mandarins
  • 170g (1/2 cup) sweet orange marmalade
  • 185ml (3/4 cup) water
  • 60g (1/4 cup) caster sugar
  • 2 100g containers mango flavoured frozen yoghurt

Method

  • Step 1
    Juice 2 of the mandarins. Peel the remaining mandarins and use a serrated knife to cut each mandarin into 4 rounds.
  • Step 2
    Combine the mandarin juice, marmalade, water and sugar in a large non-stick frying pan. Stir over medium heat until the marmalade and sugar dissolve. Bring to the boil and simmer, uncovered, for 6-8 minutes or until the syrup thickens slightly. Add the mandarin slices and reduce heat to medium-low. Simmer, uncovered, for 4-5 minutes or until warmed through.
  • Step 3
    Divide the mandarin slices among serving bowls and drizzle generously with the syrup. Serve with the frozen yoghurt.
