  • 300g (2 cups) frozen peas
  • 2 garlic cloves, chopped
  • 1 lemon, rind finely grated
  • 2 tablespoons fresh mint leaves, plus extra, to serve
  • 125ml (1/2 cup) crème fraîche
  • 40g (1/2 cup) shredded parmesan, plus extra, to serve
  • 350g dried tagliatelle


  • Step 1
    Bring a large saucepan of salted water to the boil over high heat. Cook peas for 2 minutes or until tender. Use a slotted spoon to transfer to a bowl. Place 13⁄4 cups of the peas in a food processor. Add garlic, rind and mint. Process to a coarse paste. Add crème fraîche and parmesan. Season with pepper and process until smooth.

    Meanwhile, add pasta to pan of boiling water. Cook, following packet directions, until al dente. Drain and return to the pan.

    Add pea mixture to pasta and toss to combine. Season. Stir in remaining peas. Serve sprinkled with the extra parmesan and mint.
