  • 1 1/2 tablespoons salt-reduced soy sauce
  • 1 teaspoon sesame oil
  • 4 (125g each) salmon fillets, skin on
  • 30g (1/4 cup) green tea leaves
  • 70g (1/3 cup) jasmine rice
  • 1 1/2 tablespoons brown sugar
  • 3 large zucchini, trimmed, cut into noodles
  • 300g frozen edamame, steamed, podded
  • 250g red cabbage, thinly sliced
  • 4 radishes, thinly sliced
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon sesame seeds, lightly toasted
  • 1/2 teaspoon wasabi paste
  • 1 tablespoon mirin


  • Step 1
    Combine 1 tbs soy sauce and 1⁄2 tsp oil in a bowl. Place salmon in a shallow glass or ceramic dish. Pour soy mixture over salmon. Cover and place in the fridge for 30 minutes to marinate.
  • Step 2
    Line a large wok with 4 layers of foil, allowing edges to overhang. Combine tea, rice and sugar in a bowl. Place in base of prepared wok. Place a wire rack or steamer in wok to sit about 5cm above the foil. Spray rack or steamer with oil. Add the salmon. Cover wok to enclose.
  • Step 3
    Heat wok over high heat until tea mixture starts to smoke. Reduce heat to medium and cook, covered, for 7 minutes for medium or until cooked to your liking. Remove rack or steamer and set salmon aside for 5 minutes to rest.
  • Step 4
    Meanwhile, combine zucchini, edamame, cabbage, radish, chives and sesame seeds in a large bowl. Season with sea salt.
  • Step 5
    Combine wasabi, mirin and remaining 2 tsp soy and 1/2 tsp oil in a bowl. Divide salad among plates. Top with salmon. Drizzle with dressing.
