  • 500g beef rump steak, cut into strips
  • 2 teaspoons canola oil
  • 1 teaspoon crushed garlic
  • 1/2 red capsicum
  • 80g button mushrooms
  • 1 tablespoon red curry paste
  • 1 tablespoon brown sugar
  • 1 tablespoon fish sauce
  • 150ml light coconut milk
  • 80g spinach, chopped
  • 4 tablespoons chopped fresh coriander or basil

Method

  • Step 1
    Mix beef strips with oil and garlic.
  • Step 2
    Heat wok (or frypan) on high. Stir fry beef strips in small batches for 1 – 2 minutes. Remove when cooked and allow wok to reheat before stir-frying next batch.
  • Step 3
    Add capsicum and mushrooms to wok with a sprinkling of water. Steam 1-2 minutes.
  • Step 4
    Return stir-fried beef strips. Add red curry paste, brown sugar, fish sauce, coconut milk, spinach and basil or coriander. Toss to heat through about 1 – 2 minutes.
