Ingredients

Melted butter, to grease

5 eggs

215g (1 cup) caster sugar

125ml (1/2 cup) fresh orange juice

1 tablespoon finely grated orange rind

30g unsalted butter, melted

40g (1/4 cup) plain flour, sifted

Orange zest, to decorate

Double cream, to serve

Step 1Preheat oven to 180°C. Lightly grease a 23.5 x 29cm swiss roll pan with melted butter. Line with baking paper. Use an electric beater to beat eggs and 155g (3/4 cup) of sugar in a bowl until thick and pale and a ribbon trail forms when beaters are lifted. Beat in orange juice, orange rind, butter and flour until well combined. Pour into prepared pan. Bake for 15-18 minutes or until golden.

Step 2Meanwhile, sprinkle the remaining sugar over a clean tea towel.

Step 3Turn cake onto the tea towel and remove the baking paper. Starting with the long side closest to you, and using the tea towel as a guide, gently roll up the cake. Set aside, seam-side down, for 15 minutes to cool. Place in the fridge for 2 hours to set. Cut into slices. Top with orange zest and serve with cream.
